Culinary School - Week 4 (Cake class only)

Today, Advanced Cakes and Classical Tortes class was all about pies and ice creams! You aren't going to believe all the different pies/tarts we made as a class. There were...
Coconut Cream
Pear Frangipane

Raspberry Lemon Meringue
Key Lime

This is a fresh fruit tart with a chocolate crust, filled with pastry cream and chantilly cream, then garnished with fresh fruit and glazed to give it a beautiful glossy finish.


This is a beautiful lemon meringue pie. (I have decided that I "need" to add blow torch to my Christmas list this year. Browning these meringues was just way too fun!)


This is one of my faves and one that I was able to work on from start to finish during class - Key Lime Pie!


This is the Pear Frangipane with its pear slices so strategically placed. Almost too pretty to eat. (Notice how I said, "almost".)


Today was a great day! Filled with lots of good eating!
